These amazing preserves are made in the north of Tasmania by Kate Smith Just Add Moonshine (JAM) from roadside fruit, excess produce from farms and the bounty of friends gardens. Kate is a writer and the names for her products are evocative and sometimes tongue in cheek. Her creativity spills over into the combination tastes she magically combines, inspired by her walks with her familiar Rio.

A delicious marmalade made from cumquats from Graham and Shirley @ Riverside, sugar, water, blackened honey @ Evandale, rosemary @Feast Cafe, pepper and salt.
